It can be a bit crazy getting back into the swing of things after Thanksgiving. After eating too many of my favorite Thanksgiving treats, it is important to make some healthy meals before all those Christmas cookies start screaming my name!
Here is what we are making this week –
Monday, November 26th: Spaghetti Squash Pad Thai (I roasted the spaghetti squash towards the end of last week, but ended up not making it!)
Tuesday, November 27th: Vegetable Curry (and possibly adding in some chicken to this dish)
Wednesday, November 28th: Chicken, spinach, and white bean soup
Thursday, November 29th: Crispy Kale Salads
Friday, November 30th: Butternut Squash and Black Bean Enchiladas
