Happy MLK Day and Inauguration Day everyone!
Mark and I are both off work, so we started off the day with Greek inspired scrambled eggs and peppered turkey bacon.
The eggs were scrambled with diced onion, diced tomatoes, chopped spinach, and crumbled feta cheese. Topped with just a bit of salt and pepper and a hot coffee on the side made for the perfect breakfast.
As I was making breakfast, I threw dinner into the crockpot – Buffalo Chicken Chili. I LOVE hot sauce so when I stumbled across this recipe I couldn’t wait to give it a try.
The recipe was super easy and besides chopping the onion, carrots, and celery it came together really quickly. It is sitting in the crockpot now and I hope that it tastes as delicious as it smells!
- Breakfast: Greek style scrambled eggs and turkey bacon
- Mid-morning snack: banana
- Lunch: roasted veggie wrap and a side salad
- Dinner: Buffalo Chicken Chili
My first trip to the gym post-marathon! I started my new strength training program which took about 25 minutes. I finished that up with 5 minutes of ab exercises.
- Squats 5×5
- Bench Press 5×5
- Barbell Row 5×5
I’m feeling good and can’t wait to get back to running this week!
