This recipe is awesome!!
I put it in the crockpot this morning and when I came home, dinner was ready to go. I love crockpots and this recipe is definitely a keeper!
I served it with Trader Joe’s quick cook brown rice, broccoli, and a drizzle of BBQ sauce. I loved the pineapple and the BBQ sauce combination. I’m so excited to have lots of yummy leftovers for the week.
So here is a recap of today…
- Breakfast: overnight oats
- Lunch: salad with turkey, feta cheese, and balsamic vinaigrette; apple and an almond dark chocolate chip cookie
- Mid-afternoon snack: baby carrots and blueberry Greek yogurt
- Dinner: Hawaiian BBQ pulled pork with brown rice and broccoli
I’m sure ill find something for a snack later tonight!
I started my NWM half training plan today – strength training and a 2 mile run.
I did 5 sets of 5 reps of squats and overhead press followed by 3 sets of 5 reps of dead lifts.
I tried to focus on speed with this run and I ran 2 miles in 18:38, 9:18 pace.
- 1 min 6.0, 1 min 6.5 x 3
- 1 min 6.2, 1 min 6.7 x 3
- 1 min 6.4, 1 min 6.9 x 3
